Savory Super Bowl Cheesy Buffalo Casserole

No matter who you are cheering for, this delicious, low fat recipe will be a crowd pleaser!

Cheesy Buffalo Cauliflower Casserole

Makes 4 servings

Per serving: 1 Leaner protein, 2 vegetables, 3 condiments, 1 fat

4 cups cauliflower, cut into florets
2 teaspoons extra-virgin olive oil
½ tsp kosher salt
½ tsp Freshly ground black pepper
12 oz. plain, low fat greek yogurt
1/3 c. Frank’s Red Hot Buffalo Wings Sauce
1/4 c. low carbohydrate ranch dressing such as Hidden Valley Light Buttermilk Ranch
1/2 c. sliced green onions, including some for garnish
1 tbsp. garlic powder
12 oz. shredded rotisserie chicken
1/2 c. shredded low fat Cheddar
1/2 c. shredded low fat gouda

Preheat oven to 450 degrees F. In a baking dish, toss cauliflower florets with olive oil and season with salt and pepper. Bake until tender, 20 minutes. Reduce oven temperature to 350 degrees F.

Meanwhile, in a medium bowl, stir together yogurt, buffalo sauce, ranch, green onions, and garlic powder until combined. Set aside. Toss rotisserie chicken with roasted cauliflower in baking dish and spread buffalo mixture on top.

Top with cheddar and gouda and bake until cheese is completely melted and bubbly, 20 minutes.

Let cool 10 minutes, then drizzle with ranch and garnish with green onions or chives and serve.
